Cheeseburger Soup

This recipe is what I use to serve the hundreds of people that come to Bruce Cafeteria every 3 Fridays. I've been told that it's been a hit for the last couple of years and mine is no different.

Preparation

Depending how much you want to make you can modify my quantities but this amount will prepare about 250 servings(the amount I prepare for my job at Bruce Cafeteria at UNT). 

You will need:

1 x crate of milk

1 x cup of flower

1 x stick of butter

1 x onion

1/2 x stalk of celery 

6 x carrots

12 x potatoes 

2 x sticks of velveeta

Everything is diced, salt and pepper are to-taste and feel free to add any other spice you desire to your own cheeseburger soup. 

Instruction

  1. Steam the potatoes before putting them in near the end of the process.
  2. Melt butter in pot until it is almost completely melted
  3. Add flour and stir until it is mixed, be careful not to let this cook too much or it will become dry.
  4. Add the ground beef and cook until brown, be sure to keep stirring throughout making this soup to ensure it cooks evenly.
  5. Add vegetables after meat has started to brown and cook till the onions have caramelized.
  6. Pour in milk 2 quarts of milk and 1/8 of the diced cheese
  7. Repeat step 6 after the cheese has started to melt(you can check by spooning a portion of the soup) and repeat until you have used all of the milk and cheese.
  8. Add potatoes and stir until potatoes are cooked(it will be soft for chewing).
